Veggie pizza dip brings together the creamy herb topping and crunchy vegetables of a cold veggie pizza in a bowl you can scoop. There’s no crust to bake: finely chopped broccoli, carrot, bell pepper and scallions are folded into a cream cheese base, with a little cheddar for extra flavor.
Serve it with bell pepper strips, cucumber spears or sturdy crackers. The key is to chop the vegetables small and dry them thoroughly, so each scoop stays creamy rather than watery.
What Is Veggie Pizza Dip?
This cold vegetable pizza dip takes its inspiration from the American appetizer made with a baked crescent-roll crust, a creamy topping and chopped raw vegetables. Here, the vegetables go into the dip itself, with a small amount scattered over the top.
It differs from a plain cream cheese vegetable dip: the chopped vegetables are a defining part of the recipe, adding crunch throughout.
Ingredients
Use US measuring cups and spoons. Vegetable weights are approximate and refer to prepared ingredients.
Creamy base
- 8 ounces (226 g) full-fat block cream cheese, softened
- ½ cup (120 g) sour cream
- ½ cup (55 g) finely shredded cheddar cheese
Vegetables
- ¾ cup (about 55 g) finely chopped broccoli florets
- ½ cup (about 55 g) grated carrot
- ½ cup (about 75 g) finely diced red bell pepper
- ¼ cup (about 25 g) thinly sliced scallions
Herb seasoning
- 1 teaspoon dried parsley
- ½ teaspoon dried dill
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ¼ teaspoon fine salt, then adjust to taste
- ⅛ teaspoon ground black pepper
For serving
Cucumber spears, bell pepper strips, celery sticks or sturdy crackers.
Why block cream cheese? It provides a firm base that can hold the chopped vegetables. Spreadable cream cheese from a tub may give a softer result.
Why sour cream? It loosens the cream cheese enough for dipping. Add it gradually rather than trying to correct a thin mixture later.
How to Make Veggie Pizza Dip
1. Prepare and dry the vegetables
Rinse the vegetables under running water before cutting, then dry thoroughly with a clean towel.
Chop the broccoli into small pieces, around ⅛–¼ inch (3–6 mm). Grate the carrot and shorten any long strands. Dice the pepper finely and slice the scallions thinly.
Spread the prepared vegetables on a clean towel and blot away visible moisture. Small, dry pieces are easier to distribute through the dip.
2. Mix the creamy base
Beat the softened cream cheese until smooth. Add the sour cream in two additions, mixing until evenly combined.
Stir in the parsley, dill, garlic powder, onion powder, salt and pepper. Scrape the sides and bottom of the bowl so no pockets of plain cream cheese remain.
3. Fold in the vegetables and cheddar
Reserve about ¼ cup of the mixed vegetables and 1 tablespoon of the measured cheddar for the topping.
Fold the remaining vegetables and cheese into the creamy base with a spatula. Avoid blending the whole mixture: the vegetables should stay visibly chopped.
4. Assemble and chill
Spread the dip in a shallow serving bowl. Cover and refrigerate for about 30 minutes to let the flavors come together.
Add the reserved topping near serving time. Taste and adjust the seasoning before putting the bowl on the table.
How to Keep the Dip from Getting Watery
Start with dry vegetables and a thick base. Water left on washed broccoli or peppers can thin the mixture.
Cucumber and tomatoes are better served alongside this version. If you use them inside the dip, remove their watery centers, dice them finely and blot them dry first. They may still soften the mixture during storage.
Do not add extra sour cream immediately after chilling. Cold cream cheese becomes firmer; stir a small portion and check its texture before changing the whole batch.
If liquid collects around the edge, spoon it off before gently stirring. For more ingredient-specific advice, see how to fix a watery dip.
Substitutions and Adjustments
For a stronger dill flavor: Add another ¼ teaspoon dried dill, then taste after chilling.
For a milder onion flavor: Reduce the scallions to 2 tablespoons.
For a different crunch: Replace some of the broccoli with an equal volume of finely chopped cauliflower.
Using ranch seasoning: Omit the homemade herb seasoning and start with 1 teaspoon packaged ranch seasoning. Taste before adding more; salt levels and seasoning strength vary between brands.
Using Greek yogurt: Thick, plain Greek yogurt can replace the sour cream, although the flavor will be tangier and the texture may differ. For a dip built primarily around yogurt, use Greek yogurt vegetable dip.
What to Serve with Veggie Pizza Dip
Choose something sturdy enough to scoop the chopped vegetables:
- Wide bell pepper strips
- Celery sticks
- Cucumber spears
- Pita chips
- Pretzel crisps
- Firm crackers
Keep crackers separate until serving so they stay crisp. For a larger menu, pair this rich dip with a contrasting option from our party vegetable dips.
Make-Ahead Preparation
For the freshest presentation, prepare the creamy base and chopped vegetables separately the day before. Refrigerate both in covered containers, keeping the reserved topping separate.
Check the vegetables for moisture before combining. Fold them into the base, chill, and garnish close to serving.
If taking the dip to a gathering, transport it in an insulated cooler with ice packs and refrigerate on arrival.
Storage and Serving Safety
Keep the dip covered and refrigerated at 40°F (4°C) or below. As a conservative household plan, make only what you expect to use within three days, using fresh ingredients and observing any earlier package use-by instructions.
Discard perishable dip left without temperature control for more than two hours, or one hour when temperatures exceed 90°F (32°C). Refrigerating it afterward does not reset that time.
Serve a small bowl and keep the reserve chilled. Replace the serving bowl with a fresh portion rather than continually topping it up.
See FoodSafety.gov’s food-safety guidance and our vegetable dip storage guide.
Freezing is not recommended for texture: the raw vegetables may lose their crunch and release water after thawing.
Frequently Asked Questions
Does veggie pizza dip contain pizza sauce?
This cold version does not. Its flavor comes from cream cheese, herbs, cheddar and crunchy vegetables, inspired by cold crescent-roll veggie pizza.
Can I make it without mayonnaise?
Yes. This recipe uses cream cheese and sour cream without mayonnaise.
Can I serve it immediately?
You can serve it after mixing, although a short chill gives the dried herbs time to hydrate. The dip will become firmer as it chills.
Can I double the recipe?
Yes. Double the ingredients and divide between two shallow bowls. Keep one refrigerated while serving the other.
Is it gluten-free?
Check the labels on every ingredient, particularly packaged seasonings, and choose suitable dippers. Ordinary wheat crackers are not gluten-free.
Can I heat it?
This recipe is designed as a cold dip. For a warm appetizer, choose one of our hot vegetable dips.
