Servings: 1 batch (divide as needed)

Ingredients

  • 8 oz cream cheese 226 g, softened
  • 1/2 cup sour cream 120 g
  • 1/2 cup finely shredded cheddar 55 g
  • 3/4 cup finely chopped broccoli florets 55 g
  • 1/2 cup grated carrot 55 g
  • 1/2 cup finely diced red bell pepper 75 g
  • 1/4 cup sliced scallions 25 g
  • 1 tsp dried parsley
  • 1/2 tsp dried dill
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp fine salt
  • 1/8 tsp ground black pepper

Method

  1. Wash and thoroughly dry vegetables. Chop broccoli into 3–6 mm pieces, grate carrot, dice pepper and slice scallions.
  2. Beat softened cream cheese until smooth. Mix in sour cream in two additions, then stir in parsley, dill, garlic powder, onion powder, salt and pepper.
  3. Reserve 1/4 cup mixed vegetables and 1 tablespoon measured cheddar. Fold remaining vegetables and cheddar into the base.
  4. Spread in a shallow bowl, cover and refrigerate 30 minutes. Add reserved topping near serving and adjust seasoning.

Notes

Times are estimates: 25 minutes active preparation with already-softened cream cheese, plus 30 minutes chilling. Allow additional time to soften the cheese. Batch yield has not been measured; divide into portions as needed. Serve with cucumber, pepper strips, celery or sturdy crackers. Keep refrigerated at 40°F (4°C) or below.
