Green peas provide both the flavor and body in this fresh dip. Peas are legumes botanically, so this recipe should not be described as legume-free.
Why frozen peas?
Frozen peas make the recipe practical year-round. Cook them according to the package directions, cool promptly and drain well before blending.
Keep mint secondary
Start with 1/4 cup loosely packed fresh mint. The intended balance is pea first, mint second.

Ingredients
- 10 oz / 285 g frozen green peas
- 1/4 cup loosely packed fresh mint leaves
- 2 tbsp extra-virgin olive oil
- 1 tbsp fresh lemon juice
- 1/2 tsp finely grated lemon zest
- 1/4 tsp garlic powder
- 1/4 tsp fine salt
- 1/8–1/4 tsp black pepper
- 1–3 tbsp cool water, only as needed
Instructions
- Cook the frozen peas according to package directions.
- Cool promptly and drain thoroughly.
- Process peas, mint, olive oil, lemon juice, zest, garlic powder, salt and pepper.
- Add 1 tbsp water and process again. Add more 1 tbsp at a time only if needed.
- Taste and adjust.
