A fresh green vegan dip made with peas, mint, lemon and olive oil.

Green peas provide both the flavor and body in this fresh dip. Peas are legumes botanically, so this recipe should not be described as legume-free.

Why frozen peas?

Frozen peas make the recipe practical year-round. Cook them according to the package directions, cool promptly and drain well before blending.

Keep mint secondary

Start with 1/4 cup loosely packed fresh mint. The intended balance is pea first, mint second.

Ingredients

  • 10 oz / 285 g frozen green peas
  • 1/4 cup loosely packed fresh mint leaves
  • 2 tbsp extra-virgin olive oil
  • 1 tbsp fresh lemon juice
  • 1/2 tsp finely grated lemon zest
  • 1/4 tsp garlic powder
  • 1/4 tsp fine salt
  • 1/8–1/4 tsp black pepper
  • 1–3 tbsp cool water, only as needed

Instructions

  1. Cook the frozen peas according to package directions.
  2. Cool promptly and drain thoroughly.
  3. Process peas, mint, olive oil, lemon juice, zest, garlic powder, salt and pepper.
  4. Add 1 tbsp water and process again. Add more 1 tbsp at a time only if needed.
  5. Taste and adjust.
