Turkey Veggie Tray with Dip for Thanksgiving

Turkey veggie tray with carrot and pepper feathers, cucumber slices, broccoli, and herb dip topped with a red pepper turkey face.

A turkey veggie tray makes a colorful Thanksgiving appetizer from vegetables you can find at almost any grocery store. Carrot sticks and bell pepper strips form the feathers, cucumber slices add a green band, and a small bowl of herb dip becomes the turkey’s body.

The finishing touch is a bell pepper face with olive eyes and a yellow pepper beak. Everything is edible, and you can assemble the design without toothpicks or a special turkey-shaped platter.

This guide explains how to build the arrangement, choose a dip that supports the face, and prepare the vegetables ahead without leaving the finished tray sitting out.

Turkey Veggie Tray Ingredients

The following quantities are a starting plan for 8 appetizer servings when other food is available. Vegetable weights refer to prepared ingredients; keep any pieces that do not fit refrigerated for refills.

  • 8 ounces (225 g) carrots, peeled and cut into sticks
  • 10 ounces (285 g) English cucumber, sliced into rounds
  • 6 ounces (170 g) broccoli, trimmed into small florets
  • 1 large red bell pepper, about 6 ounces (170 g)
  • 1 large yellow bell pepper, about 6 ounces (170 g)
  • 1½ cups (360 ml) thick prepared herb dip
  • 1 pitted black olive, cut into small pieces for the eyes

Use a thick dip, such as Greek yogurt vegetable dip, rather than a thin, pourable dressing. You will need a small amount to attach the face decorations.

Equipment

  • A round serving platter approximately 16 inches (40 cm) across
  • A small dip bowl approximately 4 inches (10 cm) across
  • A cutting board, knife and clean kitchen towel

Check that your platter fits in the refrigerator before assembling. Two smaller trays are another option if one large platter is difficult to chill.

Prepare the Vegetables and Face Pieces

Wash the vegetables under running water, then dry thoroughly. Cut the carrots into sticks about 3–4 inches (8–10 cm) long. Slice the cucumber approximately ¼ inch (6 mm) thick.

Trim broccoli into bite-size florets with short stems. Large florets can hide the cucumber band and make the tray difficult to serve.

Before slicing the red pepper into strips, reserve a rounded section from its base, roughly 2–3 inches (5–8 cm) tall. Remove the seeds and white ribs carefully, keeping the rounded exterior intact. This piece will form the head.

From the yellow pepper, reserve a small triangle for the beak. Cut a narrow red pepper strip for the wattle—the red piece hanging beside the beak. Slice the remaining peppers into dipping strips.

How to Make a Turkey Veggie Tray

1. Position the empty dip bowl

Place the bowl near the front edge of the platter, leaving a little room around it for guests to reach the dip.

The broad space behind the bowl is where you will build the feather fan. Positioning the bowl first prevents you from filling the platter and discovering there is no room for the body.

2. Arrange the outer carrot feathers

Lay carrot sticks in a broad semicircle behind the bowl, pointing outward like spokes.

Keep the sticks mostly in a shallow layer. Their outer ends should remain inside the platter’s edge so the tray is easier to move and cover.

3. Add the pepper band

Arrange red and yellow pepper strips over the inner ends of the carrots. Follow the same curved outline, leaving the carrot tips visible.

Alternate the pepper colors or use small groups of each. Either approach works; the important part is keeping the fan shape clear.

4. Add cucumber and broccoli

Overlap cucumber rounds in a curved band inside the peppers. Place broccoli florets in the remaining space between the cucumber and dip bowl.

Keep the florets loose enough to pick up individually. Reserve extra vegetables for replenishing rather than building a deep mound.

5. Fill the bowl

Add the chilled herb dip, leaving a little space below the rim.

Set the reserved red pepper section inside the back of the bowl, with its rounded exterior facing forward. Rest it against the bowl’s inner rim so the bowl and thick dip support it.

If it tips, shorten the piece or trim its bottom flatter. A smaller, stable head works better than a tall decoration.

6. Finish the turkey face

Pat the pepper face and olive pieces dry.

Use tiny dots of dip to attach two olive pieces as eyes. Add a small dot of dip to each olive eye if you want the white centers shown in the illustration.

Attach the yellow pepper triangle as a beak, then place the narrow red pepper strip beside it. Add these pieces shortly before serving so they are less likely to slip.

Choosing the Best Dip

The dip should be thick enough to hold the pepper head while still being easy to scoop.

Good options include:

If your dip is too loose to support the decoration, serve the pepper face flat on the platter immediately in front of the bowl instead. There is no need to force an unstable decoration into place.

How Much Dip Do You Need?

For eight guests, 1½ cups provides 3 tablespoons per person across all dip flavors.

If offering two dips, divide that total between them. For example, serve ¾ cup herb dip and ¾ cup hummus, using a smaller display bowl if needed.

Appetites and the rest of the menu will affect quantities. Use our vegetable dip quantity guide to adjust the plan.

Make-Ahead Thanksgiving Veggie Tray

You can wash, cut and refrigerate the vegetables the day before. Store them in covered containers, with the dip in a separate sealed container.

Before arranging, check for moisture and blot the vegetables dry again. Follow the dip recipe’s own preparation and storage guidance.

For the best presentation, build the feather fan closer to serving and add the dip and face last. If assembling the platter ahead, cover and refrigerate it promptly.

Taking it to another house

Transport the vegetables and dip chilled in an insulated cooler with ice packs. Carry the pepper face separately in a small container and attach it after arrival.

Keep the platter level, and refrigerate everything until serving.

A Simpler Thanksgiving Veggie Tray

If you prefer to skip the turkey face, keep the curved vegetable bands and place the dip bowl at the center.

The orange, yellow, red and green vegetables still create a seasonal platter. This version is easier to cover, transport and refill.

Keep the Tray Fresh While Serving

Keep perishable dip and prepared vegetables refrigerated at 40°F (4°C) or below until serving.

Limit time without temperature control to two hours, or one hour when temperatures exceed 90°F (32°C). Keep reserve portions chilled and replace small serving portions as needed.

Follow FoodSafety.gov’s food-safety guidance. Our dip storage guide explains additional storage and serving considerations.

Store untouched reserve vegetables separately from the dip. Do not mix food from a used communal serving bowl back into the chilled reserve.

Common Problems and Easy Fixes

The pepper head keeps falling: Use a shorter piece, flatten its bottom and rest it against the bowl. Alternatively, lay the face flat in front.

The eyes slide off: Dry both surfaces and use smaller olive pieces with a tiny amount of thick dip.

The tray looks crowded: Remove a handful of vegetables and refrigerate them for refills. Keep the colored bands visible.

Water collects on the platter: Dry washed vegetables thoroughly and keep cucumber separate until assembly.

Guests cannot reach the dip: Leave clear space at the front and avoid piling vegetables over the bowl’s rim.

Frequently Asked Questions

Does a turkey veggie tray contain meat?

This version does not. The name describes the turkey-shaped vegetable arrangement.

Can I use store-bought dip?

Yes. Choose a thick dip, follow the package storage instructions and check ingredient labels when accommodating dietary needs.

Can I make it without candy eyes?

Yes. Small pieces of pitted black olive make the eyes in this version.

Do I need toothpicks?

No. The bowl supports the pepper head, and small dots of dip attach the face pieces.

Can I make a smaller turkey veggie platter?

Yes. Halve the ingredients for four appetizer servings and use a smaller platter and dip bowl. Keep the same sequence of vegetable bands.

Can I use different vegetables?

Yes. Celery sticks or snap peas can replace part of the carrot or pepper fan. Keep some long pieces for the outer feathers and smaller pieces near the bowl.

How long does assembly take?

Allow approximately 35–45 minutes for washing, drying, cutting and arranging the vegetables with dip already prepared. Making the dip adds its own preparation time.
