Baked Potato Dip with Cheddar and Green Onions

Baked potato dip with cheddar and green onions in a white bowl, served with carrot sticks, cucumber, bell peppers and potato chips.

Baked potato dip brings the familiar flavors of loaded baked potato toppings into a cold, scoopable appetizer. Sour cream provides the tangy base, sharp cheddar adds richness, and green onions give each bite a fresh onion flavor.

Despite the name, there are no potatoes mixed into this recipe. Serve it with potato chips for that familiar combination, or surround the bowl with crunchy vegetables.

This version leaves out the bacon. A little smoked paprika adds a gentle smoky note, although it does not reproduce the flavor or crisp texture of bacon.

Baked Potato Dip with Cheddar and Green Onions

A cold sour cream dip with cheddar, green onions and smoked paprika, inspired by baked potato toppings without bacon.
Prep Time 15 minutes
Chilling time 30 minutes
Total Time 45 minutes
Servings: 8 appetizer portions (about 1/4 cup each)

Ingredients

  • 1½ cups full-fat sour cream about 360 g
  • 1 cup coarsely shredded sharp cheddar cheese about 115 g
  • 3 green onions thinly sliced, approximately ¼ cup
  • ¼ teaspoon garlic powder
  • ¼ teaspoon smoked paprika
  • ⅛ teaspoon freshly ground black pepper
  • Salt only if needed after tasting

Method

  1. Prepare the ingredients. Shred the cheddar and thinly slice the green onions. Pat the onions dry if moisture remains after washing.
  2. Season the sour cream. Stir the sour cream, garlic powder, smoked paprika and black pepper together in a medium bowl.
  3. Fold in the toppings. Add the cheddar and green onions, reserving a little for garnish if desired. Stir until evenly distributed.
  4. Chill. Cover and refrigerate for 30 minutes so the seasonings can hydrate and the flavors can mingle.
  5. Taste and adjust. Stir again and taste with a vegetable or chip. Add salt only if needed.
  6. Serve. Spoon into a serving bowl and finish with the reserved cheese and green onions.

Notes

Makes approximately 2 cups. Reserve a little of the measured cheese and green onions for garnish if desired. No baking is required.

What Is Baked Potato Dip?

Loaded baked potato dip is inspired by the toppings served on a baked potato. Many versions combine sour cream, cheddar, green onions and bacon, with potato chips providing the potato element.

This recipe keeps the sour cream, cheese and onion combination while omitting the bacon. It is served cold and does not require baking.

The result is different from mashed potato dip, which contains potatoes, and from a warm cheese sauce designed for pouring over vegetables.

Ingredient Tips for a Better Texture

Use thick sour cream

Full-fat sour cream provides a rich base that holds the shredded cheese. Reduced-fat products vary in thickness and may produce a looser dip.

If a little liquid has separated in the container, stir the sour cream until smooth before measuring.

Choose sharp cheddar

Sharp cheddar gives a noticeable cheese flavor without needing to overload the bowl. Shred it coarsely enough to retain some texture, but avoid very long strands that make scooping awkward.

White or orange cheddar both work. Choose a cheese whose flavor you enjoy cold, since it will not be melted into the dip.

Slice green onions finely

Use the green tops and tender white parts. Thin slices distribute the flavor more evenly than thick pieces.

If the white portions taste especially strong, use less of them and more of the green tops.

Add salt after chilling

Cheddar and serving chips can contribute plenty of salt. Taste the chilled dip with the food you will serve before adding more.

What to Serve with Baked Potato Dip

Offer sturdy vegetables that can hold a thick dip:

  • Bell pepper strips or mini pepper halves.
  • Carrot sticks.
  • Celery sticks.
  • Cucumber spears, patted dry.
  • Small broccoli florets.

Ridged potato chips, crackers and pretzel crisps also work. Serve them separately from washed vegetables so they stay crisp.

How to Adjust the Consistency

The finished dip should hold on a vegetable stick while remaining easy to scoop.

If it is too thick: Stir in additional sour cream, one tablespoon at a time. This loosens the mixture without changing its main flavor.

If it is too loose: Fold in a little more shredded cheddar and refrigerate before checking again. Extra cheese adds both salt and texture.

If liquid appears after storage: Stir gently to recombine. Avoid adding wet vegetables directly to the bowl, as they can release more water.

Keep the vegetables alongside the dip rather than mixing them into it.

Make-Ahead Tips

Mix the dip ahead and keep it covered in the refrigerator. Reserve the garnish separately for a fresher appearance when serving.

Green onion flavor becomes more pronounced as the dip rests. Taste again before bringing it to the table, particularly if you used plenty of the white portions.

Put out a small serving bowl and replenish it from a refrigerated portion as needed. Refrigerate leftovers promptly. For general handling guidance, see the USDA’s advice on leftovers and food safety.

Simple Baked Potato Dip Variations

Chive version

Replace the green onions with 2–3 tablespoons of finely chopped fresh chives for a gentler onion flavor.

A little heat

Add a small pinch of cayenne or a little finely chopped jalapeño. Start with less and taste before adding more.

Part Greek yogurt

Replace ½ cup of the sour cream with thick plain Greek yogurt. Expect a tangier flavor and a texture that depends on the yogurt.

Smoked cheddar

Replace part of the cheddar with smoked cheddar. Reduce or omit the smoked paprika so the smoke flavor does not dominate.

If choosing ingredients for a vegetarian diet, check that the cheese uses vegetarian-suitable rennet.

Frequently Asked Questions

Does baked potato dip contain potatoes?

This version does not. The name refers to the flavors of baked potato toppings. Potato chips or cooked potato wedges can be served alongside it.

Is this loaded baked potato dip served hot or cold?

This recipe is served cold. It has not been developed as a baked dip, so use a recipe specifically designed for heating if you want a hot version.
