Ingredients

  • 1 medium ripe avocado Peeled and pitted. Choose one that yields slightly to gentle pressure.
  • ½ cup plain Greek yogurt 120 g; Use thick, unsweetened yogurt for a scoopable dip.
  • ½ cup loosely packed fresh parsley leaves Remove the thick stems.
  • ¼ cup loosely packed fresh basil leaves Adds a fresh, slightly sweet herbal flavor.
  • 2 tablespoons chopped fresh chives Bring a mild onion flavor.
  • 2 tablespoons fresh lemon juice Brightens the herbs and balances the avocado.
  • 1 tablespoon extra-virgin olive oil Helps create a smooth finish.
  • 1 small garlic clove Peeled.
  • ¼ teaspoon fine salt Start here, then adjust to taste.
  • ⅛ teaspoon freshly ground black pepper For gentle warmth.
  • 1-2 tablespoons cold water Optional, only if needed to help the mixture blend.

Method

  1. Wash the parsley, basil, and chives, then dry them thoroughly. Excess water can make the finished dip thinner than intended. Cut the avocado in half, remove the pit, and scoop the flesh into a food processor or high-powered blender.
  2. Add the Greek yogurt, parsley, basil, chives, lemon juice, olive oil, garlic, salt, and black pepper. Start without adding water. The avocado and yogurt should provide enough moisture for many food processors.
  3. Process for 1–2 minutes, stopping to scrape down the sides as needed. Continue blending until the herbs are finely incorporated and the dip looks creamy and evenly green. If the mixture is too thick for your equipment, add cold water one teaspoon at a time . Avoid adding too much, since the goal is a thick vegetable dip rather than a pourable dressing.
  4. Taste the dip and adjust the lemon juice, salt, or black pepper as needed. Transfer it to a serving bowl. If desired, garnish with finely chopped chives, a few parsley leaves, or a small drizzle of olive oil. Serve immediately with fresh vegetables.

Notes

Preparation time and servings are approximate. Use fresh herbs; add cold water only as necessary for blending.
