Ingredients

  • 1 medium English cucumber about 8 oz / 225 g
  • 8 oz cream cheese 225 g, softened
  • 1/2 cup sour cream
  • 2 tbsp finely chopped fresh dill
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1 tsp fresh lemon juice
  • 1/2 tsp fine salt divided
  • 1/4 tsp black pepper

Method

  1. Grate the cucumber and toss with 1/4 tsp salt. Let stand 10 minutes.
  2. Squeeze the grated cucumber very well in a clean towel.
  3. Beat softened cream cheese until smooth and mix in sour cream.
  4. Add garlic powder, onion powder, lemon juice, remaining salt and pepper.
  5. Fold in cucumber and dill.
  6. Cover and chill 30 minutes before serving.

Notes

Yield: about 2 cups. The 20-minute preparation allowance includes the cucumber’s 10-minute salted rest; it is not 20 minutes of uninterrupted active work. The 50-minute total includes 30 minutes of chilling. Use softened cream cheese and squeeze the cucumber thoroughly.
